Clams Casino and Beef Tenderloin topped with a Mixed Mushroom Butter

If ever was there a grill built for two it is the standard sized Beefer. Sure, it cooks so fast that it can shoot out entree after entrée to feed a family of six in no time, but if there are only two of you, this unit is just about perfect. Consider this surf and turf dish that is sure to turn anyone into a true romantic. If you prep the Clams Casino filling the day before along with the mushroom butter, the prep time on this meal is so quick, microwave dinners will be jealous with how quickly you get everything plated. And if it were me, I would triple the Clams Casino ingredients and keep churning out yummy clams by the tray while devouring the succulent steaks.

Ingredients

  • 12 littleneck clams scrubbed
  • 8 tbsp unsalted butter divided
  • ½ cup finely diced red bell pepper
  • ½ cup finely diced yellow onion
  • ½ lb diced crispy bacon
  • ¼ cup chopped Italian parsley
  • 1 cup panko bread crumbs
  • 4 tbsp olive oil divided
  • ½ cup sliced crimini mushrooms
  • ½ cup sliced shitake mushrooms
  • 1 tsp minced garlic
  • Salt & pepper to taste
  • 2 filet mignon steaks between 6-8 ounces
  • 4 lemon wedges

Grilling Instructions - Step 1 & 2

  1. Gently steam clams until just opened and set aside reserving ¼ cup of clam juice
  2. Saute’ mushrooms on medium-high heat in 2 tbsp olive oil until lightly browned and no juice is present, add garlic and continue sautéing for an additional 5 minutes.Set aside and allow to cool to room temperature:

Saute’ onions and peppers on medium heat in 4 tbsp butter until slightly tender (about 5 minutes):

Add panko bread crumbs, parsley, bacon, and reserved clam juice to onion mixture and mix thoroughly

Add mushroom mixture and remaining 4 tbsp butter to food processor and pulse until well incorporated:

Remove one half clam shell and discard.Place about 1 tbsp bacon bread crumb mixture into the clam half with the meat and gently pack it down

STEP 7 & 8

Pre-Heat your Beefer 1500 degrees Infrared Grill on medium high setting for about 5 minutes and rub steaks with remaining olive oil and salt

On the highest rack setting allowed, broil steaks for about 90 seconds per side until that gorgeous flavor crust forms on both sides, remove from heat and allow to rest:

Turn heat setting down to low and broil Clams Casino on lowest rack setting until bread crumbs are lightly browned:

  • Place a generous scoop of mushroom butter on steaks and broil on low heat on the lowest rack setting until butter just begins to melt
  • Serve immediately with lemon wedges for clams:
