The Beefer may be named for steak, but it isn’t a one trick pony (or cow for that matter). It is a versatile grill that can cook any number of amazing dishes beyond the magical things it does to steak. Consider, for example, this wonderful concoction. The title has in it, S’More, Chocolate, Pudding and Brownie. The word, “Decadence,” isn’t in the title, but it is implied!
Brownie Ingredients:
- 1/4 cup unsalted butter, divided
- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 teaspoon instant espresso powder
- 2 tablespoons unsweetened cocoa powder, see *Tip 1
- 1/4 cup milk
- 1 teaspoon vanilla extract
Pudding and Topping Ingredients:
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/3 cup hot tap water
Topping:
- 1 cup miniature marshmallows
- 1 cup chocolate kisses
- 1/2 cup graham cracker pieces

Grilling Instructions:
Ignite the Beefer Infrared Grill to high heat for 5 minutes. Turn knob to medium-low heat:

Place butter on a Beefer drip tray. Insert tray on the bottom shelf, and heat until butter has melted:

Leave 2 tablespoons of melted butter in the Beefer tray and set aside for the brownie batter. Transfer 2 tablespoons of melted butter to a (2-cups) pourable measuring bowl:
Add milk and vanilla to the melted butter in the measuring bowl and whisk until combined. Set aside.

In a small bowl, whisk together the flour, sugar, baking powder, cinnamon, salt, espresso powder, and the cocoa powder. Add the milk mixture and stir until thick batter forms:

In a separate bowl, make the pudding layer: whisk cocoa powder, sugar and brown sugar, and sprinkle evenly over the brownie batter:

Place foil loosely over the brownie batter. Insert brownie tray on the bottom shelf of the Beefer, and bake for 20 minutes, turning the tray in the opposite direction, with the Beefer handle, every 5 minutes:
Remove foil and bake 3-5 more minutes until brownie has almost set:
TIP 3: Graham crackers can be added with the marshmallows before toasting but the graham crackers are more likely to get over toasted before the marshmallows do.

Arrange marshmallows and chocolate kisses on top of brownie. Cook under Beefer’s infrared heat 20-30 seconds or until toasted, turning the tray in the opposite direction as needed:

Sprinkle graham cracker pieces over marshmallows:
TIP 4: If marshmallows and graham crackers are not your jive, leave them off and serve the brownie pudding warm with mint chip ice cream!
TIP 5: Let brownie pudding set 15 minutes before digging in! And yes, your favorite ice cream on top would be delicious!
